Rice and Beans with Fish Stew
Ingredients
For Rice and Beans:
- 1 cup rice
- 1 cup beans (black-eyed or kidney beans)
- Salt to taste
For Fish Stew:
- 2 pieces of fish (e.g., tilapia or catfish)
- 1/2 cup palm oil
- 2 tomatoes, blended
- 1 onion, chopped
- Salt and seasoning to taste
Method
- Prepare the Rice and Beans: Cook beans until tender, then add rice, salt, and cook until both are soft.
- Make the Fish Stew: Fry onions in palm oil, add blended tomatoes, and cook until thickened. Add fish and season, cooking until fish is tender.
- Serve: Serve rice and beans with fish stew.
